Smoked Bluefish Recipe for Bluefish

Title: Smoked Bluefish

Difficulty: Easy
Prep Time: 15min
Cook Time: varies on smoker and fish size
Ingredients: Fresh Blue fish
Any type of fish brine (Home made or store bought)
Hickory chunks
Smoker ( I used charcol, propane and electric smokers. The electric smokers work the best. The're easy to use and maintain the proper heat settings)
Directions: Fillet, shin and debone blue fish

Make fish brine (Home made or store bought)

Place brine into a large glass container

Add fish fillets

Let fillets soak in the brine for 4 plus hours

Dry fillets with paper towels and place onto smoker racks.

Preheat smoker to 140* and wait until you have a good smoke.

Place racks with fillets in smoker.

When the fillets turn golden brown in color. Turn heat up to 170*

Remove from smoker when fillets are flaky, but not dried out.

Cool on counter , then store in refrig.

Other Notes: I don't like bluefish, but I tried this and it turned out great! It actually tastes like smoked whitting.
