Blackened Drum Recipe for Freshwater Drum

Title: Blackened Drum
by aquaticgastronomic
Type: Entree
Servings: 4
Difficulty: Intermediate
Prep Time: 15 minutes
Cook Time: 6 minutes
Ingredients: 4 freshwater drum filets
2 cups of butter ( melted)
Blackening seasoning
Directions: Take the filets and brush them with the butter completely on all sides. Then coat the filets with the blackening seasoning till completely covered and let rest for a minute. Heat a cast iron skillet till the bottom is white hot. Without any oil place the filets in the skillet to develop a crust. 3 minutes on each side should be enough for the fish. Slightly pour the rest of the butter on the crust for flavor.
Other Notes: Separate the butter to avoid contamination.
