Red in Snow Carp Recipe for Common Carp

Title: Red in Snow Carp

Prep Time: 10-15 minutes
Cook Time: 10-15 minutes
Ingredients: 2 tbsp peanut oil
1 chopped scallion
4 slices chopped ginger
a whole 2 pound carp, scaled
1 tbsp sherry
1/2 cup sliced bamboo shoots
1 cup chicken broth
1/2 cup redi-in-snow (a chinese vegetable) or broccoli
salt
Directions: In a large, heavy skillet heat peanut oil. Add scallion,ginger, carp, sherry, bamboo and chicken broth. Bring to a boil, cover and reduce to a light boil and cook for 5 minutes

Add Red-in-snow or broccoli, salt to taste and simmer 2 -3 minutes more until done.
Other Notes: Red-in-snow is typically found in Asian grocers, if you cannot find it broccoli can be used instead.
