It's all how you clean them. Recipe for Yellow Perch

Cook Time: 10
Ingredients: Lots of yellow perch.
Whipped egg in bowl.
mixture of flour, salt and pepper in another bowl.


Directions: Get a bucket of yellow perch. Cut off the head below the gills. Cut from the anus down the backbone. This will remove all the rib bones.
Now peel back the skin to the tail and you're all set.
Dip fish in whipped egg.
Roll fish in flour mixture.
Fry in frying pan with vegetable oil.
Fry till golden brown.
TA DA !!!!!
Other Notes: My father-in-law taught me this trick. After the cleaning you're left with 2 solid pieces of fish and the backbone which makes them VERY easy to eat after being fried.
The prep time is a little high but it's worth it.
