Cheesy Bacon Haddock Burger Recipe for Haddock

Title: Cheesy Bacon Haddock Burger

Ingredients: -Haddock Fillets
-Martin's Potato Rolls
-Mozzarella Cheese Slices (deli fresh, or packed slices)
-Lemon Pepper Marinade
-Bacon
-2 Tomatoes
Directions: Lightly (emphasis on light) baste the Haddock Fillets with the lemon pepper marinade, just enough to give them a little kick of flavor.

Place the fillets on a greased pan, and put in the oven for 10-12 minutes. Remove when the fillets are starting to get flakey.

Fry the bacon in a pan or on a skillet whichever you prefer, and to whatever consistency you prefer. I like my bacon a little softer rather than crispy for this particular recipe. Empty out most of the bacon grease, BUT keep a SMALL amount in (for use later, you'll see why)

Take the bacon out, and place ontop of the fillets of Haddock, place your Mozzarella cheese slices ontop of the bacon to hold the bacon together with the fish when the burger is made.

Place the fillets back in the oven, while oven is still warm; JUST ENOUGH to melt the cheese, dont want to burn the bacon or overcook the fish. Or both!

Take them out of the oven, and place your Potato roll slices face down in the little bit of left over bacon grease, to give them a nice toast and some bacon flavor! The bacon grease acts like the butter to grill the rolls in the pan.

Slice the tomatoes however thick or thin you prefer. Take the rolls out whenever they've browned/grilled to your liking. Place the Fillets on the bun, and top with the tomatoes!

Thats it! It's a fairly simple and delicious way to make your own fish burgers!
Other Notes: This recipe can be used with just about any Saltwater white fish meat. Cod, Pollock, Striper etc.
