Ingredients: Eggs, bread crumbs.
Directions: Chain Pickerel tend to be very boney, but firm and sweet. If you don't want to deal with the bones,grind the cleaned fish in a food processor. Add a little egg and bread crumbs to make fish cakes for frying.
Other Notes: Don't leave these fish on a stringer or in a live well for long. Get them gutted and on ice quickly or they'll turn mushy. Diners claim that they often taste "muddy" or "grassy" if you fail to remove the skin prior to cooking.
